Crystal Marie Knox, age 45 of Mankato and formerly of Belle Plaine, went Home to celebrate Easter with her Lord on Saturday, April 16, 2022 at Mayo Clinic Health System Hospital - Mankato. There will be no formal funeral service locally. Inurnment will take place at a later date at Sunset Rest Cemetery, Ray, North Dakota. Crystal was born in Fairbanks, Alaska on October 6, 1976 to Rickie J. and Cathy (DeMers) Knox. She graduated in 1995 from Lamanna High School in Priest River, Idaho. She shared her time between Idaho and Minnesota where her parents lived. Crystal lived at the Lutheran Home Hope Residence in Belle Plaine from 1999 until 2012 when she moved to Amber House in Mankato. She worked at MRCI from 2013 until its Covid related closing in 2020 but continued to be active in the MRCI day program.
Crystal attended St. Paul’s Ev. Lutheran Church in Mankato. She loved the Minnesota Vikings!! She participated in Special Olympics, the Vikings Training Camp Victory March, The Magnificent Mile in 2015. She liked game shows, bowling, swimming, and eating out. She loved her family, staff and housemates. She showed great affection for cats and dogs as she volunteered at Bench’s Animal Shelter in Mankato.
Crystal is preceded in death by her maternal grandmother Mary DeMers, paternal grandparents John and Janet Knox and step-mother Darla Knox.
She is survived by her parents, Cathy Cole and Rick (Kelly) Knox and her brother, David (Rachel) Knox. Survivors also include her maternal grandfather, Stephen DeMers, two nephews, numerous aunts, uncles, cousins, friends, and the loving and caring staff at Amber House and her three housemates.
